Day ninety nine

Vegetables on buffet
Southern menu.

New menu today! That time the menu is Southern American:
BBQ beef brisket with sauce
Sweet pickles (cucumber with onion)
Collard greens
Baked beans
Buttered broccoli
Glazed carrots
Cornbread
Grits (it's like polenta, but a bit finer)
Gambo with shrimp, chicken, and Andouille sausage
Coleslaw
Catfish cornmeal crusted
Ranch dressing
French fries
Seasonal vegetables

It was a big menu. The centrepiece was beef brisket. It was rubbed with mustard and spices for two days and it was smoked for approximately 12 hours after that it was finished in the oven. The meat had very
distinct smoky flavor and it was delicious.

My dish today was seasonal vegetables. "In the season" today were green zucchini, yellow summer squash (yellow zucchini), and eggplants (this is why in the season is highlighted). The first thought was to make ratatouille, however it is more French dish. Finally we decided to grill eggplants separate and serve with parsley garlic pesto. Zucchini we cooked with onions and tomatoes. We started with diced tomatoes, added garlic, then zucchini (cut and salt them for 20-30 minutes to let them release water), and at the end tomatoes (skinned and roughly chopped). We used fresh oregano for the flavor. To make this dish Southern we added fresh corn at the end (corn was coked and cut off the cobs). It was quite nice dish at the end.

After the class we had a counselling session for the whole group. The problem is that we are not able to work as a group. We always arguing and there are always some people pissed off. So we were advised to use some ways to address this issue. So tomorrow is a new day.

I did not work today, so it's strange feeling, that after class I napped for an hour and it was really great. Second day in a raw I woke up with an idea to skip a day of school. It seems I am too tired. Well in approximately four weeks we will have a break, but we have to complete this block (next Friday) and finish another three weeks block, and take our practical exam.
It looks weird to see something like this on a buffet.
Is something wrong with me or with a person who placed this?
