Somehow it slipped from my memory and only today I realized that there was no post for Friday.
You know, sometimes there is a feeling in the morning that the day is going to be bad. That was Friday. I had to wait shuttle to get to school for 15 minutes (suppose to be 10 max, usually less). Then I had issues to print timeline for the day. Then during breakfast (second day in a row) there were no smoothies (I know sounds horrible, but here is breakfast class, so it should be some and I like them).
The rest part of the day at the school was like this, we were late with our food for lunch. We had issues in the team.
Our dish was pretty easy - grilled chicken sandwich with jalapeƱo cheese and cabbage coleslaw. My timeline was not right, simply because the fact that chicken breasts for the sandwich we had to fabricate from the whole chickens. So at the beginning of class we all jumped to
break down chickens. That was not a big deal, however it took a good 25 minutes of the time. One member of our team spent more than ah hour to grill the chicken breasts (to get grill marks, as we finished cooking in the oven). Any attempts from other people to increase productivity (to grill more than 6 breasts at a time) were shrugged off.
I had to make gaufrette potatoes (potato chips which look like a grid). The chef said to cook then at 320F. I tried and they were soggy. The chef was not available for some time (could not find him). I asked the other chefs and was told to increase temperature to 350F and cook them till golden brown. At the testing my chef said it was overcooked and had an unpleasant aftertaste.
Just before service we realized that cheese had not been sliced yet (sous chef was reminded twice about this). The service was chaotic. But we did it and served our sandwiches.
Indeed it was a relief when class was over.
