Externship week thirteen


Is it easy to roll a burrito?

This week was really short for me (at work). I worked only one day - Friday. It was a new place again, this time the cafe name Masa. This cafe cooks Mexican food. I am excited to be here. I like some Mexican dishes and some of them are really simple.

The day started with a call I received from the chef. He missed me (?) and gave me a call around 7:20 when I was in a shuttle. Probably I should have let him know that I am a late bird:-) When I came to the cafe it was a bit chaotic there, however I managed to find a right person and be placed to work.

My day started from peeling butternut squash with peeler, then cleaning them from seeds, and cutting them in a bite size pieces. Actually this was the first time I have to peel them, before I used my chef knife to do the job. When you use a peeler it might be a better yield, since you cut off a little bit less skim, but the job is much more difficult (the skin is tough). 

During the lunch I worked on the line, standing at the end and rolling burritos. I thought it is easiest job. It might be after the first thousand rolled burritos. At the beginning they were not pretty at all. There were so many problems. Problem number one is that people try to put way too much stuff, so when you roll this burrito it's difficult to overlap the ends. If you put too much pressure a tortilla could tear. It was a struggle for 15 minutes and then slowly burritos improved. They were far from the perfect, but not so bad and it was not a shame to serve guests.

After lunch I received a safety training for this cafe (suppose to get it before starting work). After that it was a cleaning. This is the second place on campus doing really deep cleaning on Friday. It's easy to see right the moment you enter the kitchen.
