Day thirteen

Oats, are they gluten free?

It's Friday again. This is really good. Doen't mean that I am bored of school and want to escape by any means waiting for Friday.. School is really great, I am enjoying it so much, but a bit tired by the end of the week. Having homework for every day and for every subject is a bit too much. May be I just forget what does it mean to study.

I have received a letter from school today to get my SSN. Came to the Social Administration Office to get my SSN. Unfortunately my data does not match all systems. It seems that school did something wrong (as I was told in this office). So I have to go and check what could be wrong. This will be next week.

At school all is good. Math in the morning, following by product knowledge and food safety. Good news is
that we do not have homework for math (surprise!).

Product knowledge was about cabbages. We were told about different varieties, what to expect in terms of texture and flavor, how to choose.

There was interesting discussion regarding food allergies on food safety.  This is well known that there are food allergies and food intolerance. Food allergies are result of inability of body to digest proteins. And we have celiac disease caused by gluten, It was always puzzling why oats are so complicated - sometimes they are gluten free, sometimes they are not. We were told that they are GF, but because they are grow with wheat together. Sometimes oats are grown on the field previously used for wheat. Therefore oats are often in cross contact with wheat and not considered safe. It's kind of good explanation, but not good enough to accept it from scientific point of view.

This is going to be a long weekend. As usual I am here in San Francisco for weekend. Have some books with me and hope to to some homework (I must do at least Culinary Fundamentals for Tuesday).
