Day thirty four

Are all canned tomato equal? 

Today was a big day (may be not so big). I have had ServSafe exam. This is quite important, because you are not suppose to touch food in professional kitchen before you pass the exam and obtain the certificate. I passed the exam and certificate should arrive in about two weeks. That's right one problem down.

We are going to have our test for Product Knowledge tomorrow. There will be two parts. The first one is to identify 15 different product (all from produce category). The second part is multiple choice test. That should be fine.

It was an interesting experiment today, what was called
cut tasting. There were four different brands of canned tomato. One was San Marzano - very famose sort of tomato, very popular in Italy, great for sauce. But in our case it was actually San Marzano style (not sure what does that mean) from California  (quite mediocre). There was one imported can. The name was great - Monte Polino. Taste and texture were below the par. The best one was Muir Glen organic. It was the best out of four we have not because it is organic. The tomato are canned in their juice, so they have great flavor, good texture.  And 8 hours from field to the can as promised on the label. So they are different, canned tomato.

Tomorrow I am going to have a stage practise in our restaurant. This is for free, to prepare for the stage interview I am going to have next Monday for my externship.

Almost forget, this is a picture of chocolate work done by one of our chef, who compete last month in France. Everything is made from chocolate. Isn't it great?
