What is the major difference between apples and pears?

Another day of Liberal Arts. All as scheduled - Math, then Product Knowledge, followed by Food Safety and First Year Experience. We have two quizes today (Food Safety and First Year), hope I did allright.

Math - we moved to percentage yield. Interesting topic, slightly complicated. To do exact calculations, we have the Book of Yields. The whole books is numbers, numbers for different product. How many ounces in 1 cup of diced potato? What is yield percentage of tomato? This is important to know, because let's say the recipe calls for 2 kilos cored, skinned and sliced apples. How many apples do you need to buy to make this recipe?

Food Knowledge we moved from vegetables to herbs and then
to fruits. So today we were studying apples, pears, oranges and berries. I love fruits, and even more I love berries (I am go glad that for breakfast there is always some kind of berries or salad). Again, what you should look for when you buying fruits and herbs? What is the difference between different types? These questions are always actual on Product Knowledge and it's great to know what to buy.

The main difference between apples and pears is that apples are not ripen after harvest. If you have harvested under ripen apples, they will be at this stage. Pears are opposite, approximately 90 % off all crops of pears are harvested under ripen and they are ripen on the shelf.

As always we were able to try different kinds of apples and pears (no oranges and berries) as well as herbs. My favorit pears are Comise and D'Anjou, because they are the juiciest varieties. Apples I love small Lady Pink - they have wonderful notes of pineapple (the big one doesn't have it).

Food Safety we have another quiz, this time regarding temperature. What temperature you should cook different products, to keep it for service, to keep ingredients and so on and so forth. This course is close to the end. I believe in two weeks we have to take our Food Safety exam and got a certificate.

Today I have spoken with Manager in Teaching Kitchen. Next week will probably start my work as Teaching Assistant...
