Thursday - is a day for classes. We are heading to a mid term of the semester. Time flies! Next week there will be Food Safety exam. Also we are going to have a couple of quizes, practical exam on Culinary Fundamental. So the next week is going to be busy.
At Math class we moved to size portions. So if you have 120 portions 4 oz each, but suddenly the number of people have changed and you have to feed 150 people. What will be size of revised portion (you do not have the luxury to cook another 30 portions)? Really useful and practical knowledge.
Product knowledge is getting better and better. Today we learned tropical fruits and
nuts. Unfortunately we haven't had any nuts for tasting. But there were enough fruits to taste. We tried three kinds of bananas (usual, finger, and red). There were planans, but we have no time to cook them. What else? Mango, carambola (star fruit), passion fruit, mellon, watermelon, and papaya (tree kinds). Persimmon fruit is so acid, that was a surprise for me. I love the taste of passion in desserts, but it's always sweet.
Also I have review with my chef today. The good thing is I am staying here! LOL
Everything is good. I have a few points to pay attention, but in general I am on right track, so everything is fine. I have a couple of other questions for him. He suggested to make an arrangement for a short stage at the restaurant here. That will help to prepare for a stage interview I have scheduled for February 25. Also he kindly agreed to provide a reference for me to apply for a position of Resident Assistant on campus. Hope that will work (will share more details when all is clear).
So life is going on. Oh, yes, I finished my homework for Food Safety, the tedious homework so far (hand written approximately 35 pages)....
Tomorrow is Friday, which is a good news.
